Crockpot Chicken Chili
Ingredients:
2 pounds of ground chicken breast
1/2 cup of chopped onion 1 Tablespoon of minced garlic
2 - 4 ounce cans of diced green chilies
1 - 15 ounce can of black beans (drained)
1 - 15 ounce can of kidney beans (drained)
2 - 14.5 ounce cans of diced tomatoes 1 Tablespoon of Xylitol brown sugar blend 1 Tablespoon of chili powder 2 Tablespoons of apple cider vinegar
2 Tablespoons of spicy mustard
1 Tablespoon of regular mustard 2 teaspoons of cumin 1 teaspoon of pink Himalayan salt
Optional Toppings: cilantro, greek yogurt (as a sub for sour cream), feta cheese
Directions:
1. Brown the meat with onions and garlic in a large pot. Cook until no longer pink.
2. Place the meat in a crock pot. Add in the remaining ingredients. Stir until combined.
3. Place on "low heat" for desired time (Around 2 hours since the meat is already cooked).
Fitness Vixen Tip:
You can also make this without a crock pot. To make it without a crock pot you would still brown the meat in a large pan and then add the remaining ingredients. Bring to a boil, reduce heat and simmer for 15-20 minutes.
