Guilt Free Cinnamon Rolls
This is one of my FAVORITE recipes for a Cinnamon Roll that is actually CLEAN and GUILT FREE that I have seen yet!
INGREDIENTS:
Filling:
2.5 Tablespoons of Coconut Oil (softened--30 seconds in the microwave)
1/3 Cup of Stevia in the Raw
1/4 Cup Xylitol Brown Sugar Blend
2.5 Teaspoon of Cinnamon
Dough:
3/4 Cup of Oat Flour (Gluten Free Version)
1 cup Whole Wheat Pastry Flour
1/4 Cup of Vanilla Protein Powder (Or Vanilla Shakeology--PREFERRED)
2 Tablespoons of Stevia in the Raw
4 Teaspoons of Baking Powder
1 Teaspoon of Sea Salt
3 Tablespoons of Coconut Oil (Softened--30 seconds in the microwave)
3/4 Cup of Unsweetened Vanilla Almond Milk
DIRECTIONS:
1.) Pre-heat oven to 400 degrees.
2.) Combine ingredients for filling in a small bowl. Ingredients will form a grainy paste. Set aside.
3.) Mix the first 6 ingredients for the dough in a medium size bowl. Stir with a wooden spoon. Once combined, slowly add the softened coconut oil into the mixture and stir. This will begin forming a dough. Once combined, add almond milk to complete dough. Form a ball with the dough.
4.) Once dough is combined, place dough on a floured surface. Using a floured rolling pin, roll dough to a 1/4" consistency. Create as much of a rectangle or square while doing this.
5.) Spread 3/4 of the filling mixture over the top of the dough mixture. Be sure to coat ALL areas of the dough. Roll up dough starting at one end.
6.) Cut dough into 12 equal size pieces. Place each Cinnamon Roll into 1 section of a 12 muffin tin that has been sprayed with 100% pure olive oil (from a mister). Using a spoon add the rest of your filling mixture to the top of each Cinnamon Roll.
7.) Bake for 18-22 minutes depending on your desired consistency. Because the dough does not have yeast, it will be softest at 18 minutes.
