Healthy Blueberry Banana Muffins
Are you looking for a quick and easy recipe for breakfast? These Blueberry Banana Muffins are the perfect compliment to your eggs or Shakeology! You could even add protein powder (adjust the amount of liquid though!) to the muffin mix! The possibilities are endless!
Ingredients:
1 cup of gluten free quick cooking oats
1/3 cup of gluten free oat flour
3/4 cup of liquid egg whites (or 4 egg whites)
1 teaspoon of pure vanilla extract (avoid HFCS)
1/3 cup of Stevia in the Raw
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of Pink Himalayan salt
1 banana, mashed
1/2 cup of frozen organic blueberries
Directions:
1. Preheat oven to 350 degrees. 2. Mix all ingredients together except fruit. 3. Mash banana and add to mixture. Add frozen blueberries. Stir to combine. 4. Bake for 12-15 minutes. Makes 6 Muffins.
